Zimtsterne – Enchanted Stars
Zimtsterne, or cinnamon stars, have been lighting up the festive season in Strasbourg since the Middle Ages. Their white icing, like a touch of snow, and their spicy softness make them a delight for both the eyes and the taste buds. A recipe that makes Christmas shine.

Cinnamon Stars (Zimtsterne)
These Alsatian iced cinnamon stars have illuminated Christmas markets since the Middle Ages. Their snowy white glaze conceals a soft, spiced heart.
Ingredients (for ~20 stars)
- Egg whites 3
- Icing sugar 300 g
- Ground cinnamon 2 tsp
- Ground almonds 250 g
- Grated lemon zest ½
Preparation Method
- Whisk the egg whites to stiff peaks with 100 g of icing sugar. Set aside.
- Combine the ground almonds, remaining icing sugar, cinnamon, and lemon zest. Gently fold in the whisked egg whites.
- Roll out the dough between two sheets of baking parchment and cut into stars. Allow to dry at room temperature for 1 hour.
- Bake at 150°C (300°F/Gas Mark 2) for 12–15 minutes. The Zimtsterne should remain pale.
Did You Know?
Zimtsterne, or "cinnamon stars", were traditionally made by Alsatian nuns. Their star shape symbolised light during the long winter nights.
